Eat Local NOLA, Kosher Style

This summer marks the 6th year of the annual New Orleans Eat Local Challenge, a 30-day challenge of eating food only grown, caught, or raised within 200 miles of New Orleans. With a registration fee of $25, participants will receive an Eat Local Challenge t-shirt, an invitation to the kick-off and finale parties, a 10% discount at the Hollygrove Market & Farm, and better health and awareness of the foods available locally.

 

This June, the New Orleans community is rallying around mindfulness of the nutritional, economical, environmental, and cultural benefits of eating locally sourced food. The month is filled with fun events, like food and beverage happy hours, bike tours, workout boot camps, and more.

 

Of the many participating restaurants, we’d like to highlight HK NOLA, a local, organic, and kosher restaurant located in Uptown New Orleans. With a delicious daily menu, groceries and baked goods, a juice and coffee bar, as well as full-service catering, HK NOLA prides itself on its local ingredients and healthy options. HK NOLA is really excited to support local farmers and businesses and loves knowing that the produce they buy is always in season, has not traveled great distance, and their dime is going back into the local community and improving the economy. Chef Harveen was recently featured on Ochsner's Eat Fit Nola with Molly Kimball where she made her delicious Super Rolls (you can also view the video directly below the super roll recipe).

Super Roll with Local Market-Fresh Vegetables

Makes 1 serving


1 rice paper sheet
1/4 avocado
1/4 cup local kale, julienned
1/4 cup diced local sweet potatoes (Ed. Note: HK NOLA’s are smoked then dry roasted)
1 tablespoon quinoa, cooked
1/4 cup local sprouts
1/2 teaspoon Sriracha
1oz spicy peanut sauce with ginger and scallions on side
 

Gently bathe the rice paper sheet in hot water, until pliable and ready to roll. Slice 1/4 avocado and lay in the middle. Top with kale, sweet potatoes, quinoa, sprouts, and sriracha sauce. Fold opposite ends of the sheet to meet in the middle, then fold in the third side and use the last side to seal the wrap. Turn over and voila, enjoy with spicy peanut sauce!

 

Per serving: 220 calories, 11 grams fat, 1.5 grams saturated fat, 80 mg sodium, 27 grams carbohydrate, 6 grams fiber, 1.8 grams sugar, 5 grams protein.
